1 Epic baby back ribs
Chef Carlo Miguel's ribs are said to be the best in Boracay. They're tender, juicy, and infused with so much flavor, a hint of bourbon included, that there's no need for barbecue sauce. It's served with corn cob and baked potato topped with sour cream sauce.
2 Barbecue beer can chicken
Miguel says the team stuffs a beer can inside the whole chicken as it is grilled from one and a half to two hours. The result is a wonderfully juicy and browned chicken, glazed with barbecue sauce. Fries and coleslaw included.
3 Epic popcorn shrimps
Crunchy and light, and highly addictive, this bite-sized breaded fried shrimp is served with sweet and sour sauce, perfect for snacking or as a meal in itself.
4 Breakfast burrito
"Perfect for a hangover, right?" says Miguel. The breakfast burrito with bacon, eggs, sausages, roasted tomatoes and potato hash is a great post-party meal.
5 Kimchi steak
A juicy grilled Angus steak sits on top of spicy kimchi rice with a fried egg completing the dish. The steak is substantial and tender, and the kimchi rice not overwhelmingly spicy. A great pick-me-up.
6 Grilled tiger prawns
Epic's freshly grilled tiger prawns are served with mango salsa and grilled asparagus, capturing fresh tropical flavors in a single dish.
7 Banoffee trifle
It's the popular banoffee pie reimagined as a trifle, a dessert dish that's a classic in Miguel's native Australia. This dessert has layers of banana slices, crushed graham crackers, chocolate and sweet caramel custard topped with whipped cream and chocolate shavings.
