Situated away from the party strip, AREA 51 “Top Secret Facility” reinvents what it means to party in Boracay, with an underground island vibe where free spirits are allowed to soar in a relaxed and unpretentious party atmosphere, reminiscent of the old Boracay. December 24: Noche Buena buffet
Why go? The annual Noche Buena buffet at Dos Mestizos has always been a Boracay tradition on Christmas Eve, simply because it feels just like home! chef and owner Binggoy Remedios and his nephew chef and manager Andrew Malarky will be preparing a sumptuous feast of Spanish-Filipino Christmas table staples such as glazed ham, baked macaroni, ensalada russa (potato salad), roast pork belly, cold dressed salmon, pollo relleno (stuffed chicken), pastel de lengua (ox tongue pie), ensalada verdes (green salad), assorted puffs, paella Valenciana, and a traditional cocido (chickpea stew). The lavish dessert table features these Christmas specialties: canonigo (baked meringue), bread pudding, leche flan (caramel custard), and Brazo de Mercedes (meringue and custard cake).
